I was SO excited to find a recipe with ingredients that I actually had at my dad’s house that I chose to make it
Right after breakfast
and not bake it
and eat the whole thing.
LUCKILY, before I made it, I decided to 1/4 the recipe, seeing as there was no way I’d need 2-3 dozen cookies. But it was so tempting and just there, so I ate it.
And it was good. So since I woke up late anyway, I just considered it my lunch.
After my “lunch” I did about 50 minutes of POP Pilates, the new Bikini Blaster Booty Video and the Bikini Blaster Awesomesauce Arms were my favorites. And then I picked through a couple others as well. After that, i went for a lovely 30 minute bicycle ride in this heavy MD heat, and got SWEATYYYY. But it felt nice, and I no longer feel any guilt for having cookie dough for “lunch” (not that I felt toooo much guilt in the first place, but still).
I’m having a lovely first day of summer.
For dinner tonight we will probably be having Jerk Chicken and ASPARAGUS! Yummmmm yum yum.
PLUS, I finally got my dad to go to the store, and he bought me apples, bananas, and old fashioned oats. ‘Bout darn time!

Well, that will pretty much be my life for the next week. And every two weeks for the rest of the summer. I have a week on/week off schedule with my parents, so this week I’m with my dad. Apparently my dad, his wife and her son like to keep absolutely no real food in the house. I mean nearly nothing. They don’t even have eggs. No fruit. No vegetables. All over processed, nasty “food.”
What they do have:
McCann’s steel cut Irish oats (currently on the stove), Chobani, hummus (with no veggies to dip!!!), salsa, salad (which is reserved for dinner), frozen blueberries (I do like those), canned corn, and some nuts.
I know I sound like a spoiled food brat, but I just enjoy real food a lot more than chemical ridden “food.”
Baked Apple Walnut Oatmeal!
Meet the Single Lady Cupcake by Chocolate Covered Katie. This beautiful, single serving cupcake is DELICIOUS, and of course, like all of Katie’s recipes, HEALTHY.
I made this tonight, skeptical. She typically makes it in the oven, I am lazy, so I made it in the microwave (90 seconds)
The only substitution I made was using a tablespoon of plain greek yogurt (Chobani) instead of the applesauce (my applesauce container exploded with some sort of smoke?)
The result was very doughy, but VERY delicious. I totally recommend this quick, easy, yummy, healthy recipe.
Dinner: turkey burger patty, portabella mushroom stuffed with mozzarella and Parmesan, Parmesan bread. This was the basic meal, but I had a couple more servings… Maybe more than a couple.
Lunch! Whole grain bread, tuna, jalepenos, mustard and cheese.
So I’m trying SO hard to stop my compulsive, crazy eating that I’ve been doing lately. In efforts to prevent that, I’m going to start posting pictures of what I eat. THIS was my breakfast, Scottish oatmeal with apples, blueberries, silk, and vanilla chobani.
I ended up having a second bowl too…
This week has been terrible for me, eating wise.
I feel okay, a little powerless, but I’m not hating myself.
I do realize there is a problem. I just don’t know how to fix this.
Very high in calories… and fat… but DELICIOUS. And filling, and high in nutrients and yum.
There is almost no REAL food. The best I could find for breakfast was a Chobani and Raisin Bran with Silk. I’m almost kind of happy that I’m becoming repulsed by ‘fake’ food, but it does really limit my options over here.
